Ingredients: (Hit your return key to start a new line)
1/2 c. butter, melted*
3/4 c. brown sugar
3 eggs, beaten
1 large apple, peeled and finely chopped (should equal 1 cup)
2 3/4 c. flour
2 tsp. baking powder
1 1/2 tsp. cinnamon
1/2 tsp. ground cloves
1/2 tsp. nutmeg
1/2 tsp. salt
up to 1/2 c. chopped walnuts or almonds, if desired
Directions:
Combine butter, sugar, and eggs; blend well.
Combine flour, baking powder, spices, and salt.
Combine the sugar mixture with the flour mixture, and mix well. Add the chopped apple, and nuts, if desired, and stir.
Pour into a greased and floured loaf pan. Smooth the batter level.
Bake at 350 degrees F. for approx. 1 hour, or until knife inserted in center emerges clean.
Other suggestions and comments:
*Canola oil may be substituted for butter.
This loaf is sometimes more moist and flavorful the second day, but is still more flavorful when Warm...so I like to wrap a slice in a paper towel and microwave very briefly.
Wonderful with a cup o' tea!
Some apples hold up better than others; Granny Smith was good.
